How to edit all properties of a document?

I have a document in the outline.

It has many properties (tags, my custom columns with dates, enumerated lists, multi-choice categories, etc.)

I do not want to display all the properties as columns. How then can I edit the properties? I expected a double click, or some right click option, to allow "edit document properties".

At this time the only way to edit document properties is to press F2/click on the column field, so the column must be visible in order to do so.
